Other Typical Cheese Brands produced in the cheese factories of Marches is the Fossa Cheese. The peculiarity of this cheese is that it has been seasoned in rocks dug into the rock. It is produced with sheep's milk. This seasoning was used primarily for storage by leaving it in these pits for more than three months.
