ACCADEMIA OLEARIA is one of the most fascinating olive groves on the Peninsula. The company is located in Alghero and alone produces over 60% of the DOP Sardinia. It is the beating heart of regional production. The oil mill has made the Sardinian Cultivar, the Bosana, its excellence as well as its territorial typology and its trademark.
Interesting to know that the Accademia Olearia di Alghero company has made its philosophy its own identity. In fact, for this reason, in 2017 it won the award for best territorial performance in the Gambero Rosso Oli d’Italia guide.
This farm was founded at the beginning of the last century, thus boasting four generations of olive growers. Today it is managed, with great dedication and passion, directly by Giuseppe Fois and his family. Here, each stage of processing as well as cultivation and processing is followed personally.
An extension of 200 hectares with about 25,000 olive trees, mainly of Bosana cultivars. They are complemented by the presence of other native and national cultivars, which aim to improve and enrich the organoleptic and qualitative characteristics of the oils produced. At the Academy Olearia is produced Extra Virgin Olive Oil, a healthy and tasty food. Which is sold and distributed not only in Italy but also in major foreign markets. Green fruity extra virgin olive oil, the highest qualitative expression of the Accademia Olearia. It is a product of great balance but of very high sensorial tenor, with an olive scent, hints of apple and tomato, strong vegetal scents and a balance between bitter and spicy.

It represents one of the points of excellence of the Accademia Olearia: it is an extra virgin of olives harvested still green, combined with a process of cold transformation that takes place in a contextual way to the harvest.

The aromatized oil comes from the union between the strong flavor of the fruity oil and the most characteristic aromas of the kitchen. Excellent raw as a condiment for pasta dishes, pasta and risotto. Its characteristic flavored flavor makes the dishes tastier and more appetizing.
OLIO DA AGRICOLTURA BIO D.O.P. 75cl.
Obtained from olives mainly from Bosana cultivars, harvested at the beginning of maturation. It is an extra virgin green fruity flavor with intense hints of thistle and artichoke. It goes well with the most determined dishes of our kitchen, ideal on soups or raw.
The oil mill in Alghero operates in a modern plant that extends over an area of over 4 thousand square meters. To know that it was built with a particular attention to the protection of the environment. For this reason alternative energy sources are used. It has a 60 kWh photovoltaic system that makes it completely self-sufficient in relation to the electricity demand. The production of hot water and heating is guaranteed by a peanut boiler that uses the same waste from the processing of olives.
The olive harvest is done by mechanical means and exclusively by the plant. This happens as soon as the fruits begin to ripen, from mid-October to the end of December. The olives are pressed into a modern two-stage continuous cycle plant with a capacity of 40 ql / h, within a maximum time of 12 hours from the harvest. The annual production, on average is 1500 quintals of extra virgin olive oil. It is stored in stainless steel containers in a controlled atmosphere and temperature. These methods allow a perfect and optimal conservation of the product.
