ACETAIA VALERI is located in Magreta di Formigine and is a Modena acetaia that produces Traditional Balsamic Vinegar of Modena DOP and Balsamic Vinegar of Modena IGP. The master vinegar Giacobazzi obtains the product from the use only of native grapes of own production.

ACETAIA VALERI

Acetaia Valeri is one of the best Italian acetaias. It is registered in the Consorteria of Traditional Balsamic Vinegar of Modena, as well as in the Consorzio Tutela Traditional Balsamic Vinegar of Modena. Furthermore, to guarantee an excellent product quality, the vinegar is certified with a health authorization issued by the municipality of Formigine and by Cermet for the production chain. To know that Valeri balsamic vinegar can be purchased in specialized shops and at Fico in Bologna.

The Traditional Balsamic Vinegar of Modena is protected by a DOP specification which is not a vinegar. In fact it is a seasoning tradition that has always been produced exclusively in the province of Modena. It is obtained exclusively using only native Modena grapes. Let’s see in detail what are the grapes used. It starts with the renowned Trebbiano, then goes to Ancellotta and Sauvignon. Do not miss the original Sgavetta and Barzemino. And finally, the inevitable variety of Lambrusco, which are cooked on a slow and direct fire. After cooking it is acetified and aged in barrels of precious and different woods. This procedure requires at least 12 years or, to be defined as very old, at least 25 years.
