AGRICOLA I VITI, a passed passion of generation to generation. The cellar rises to Centoia. A fraction of Cortona, the city of which it also recognizes the importance of wine production.
In the 1950s, Pietro Viti and his son Lidio acquired an estate in the Cortona region, thus giving rise to agricultural activity. Sixty years later, nephew Henry and his son Luca decided to plant a vineyard to continue with the family farming tradition. In 2013, to follow with the project initiated during the start of the vineyard, the cellar I Viti was born. The goal of the I Viti family is to create a wine that is the fruit of the terroir and respect for the bond of the family to the territory of Cortona.
Here at Centoia Agricola I Viti is recognized among the excellent Tuscan wine producers. Beyond that, know that they are also among the best producers of Cabernet Sauvignon. The Cabernet Sauvignon Cortona DOC is produced from vines of which 85% Cabernet Sauvignon and 15% Cabernet Franc. Grapes are hand-picked and placed in small cassettes. There is then a first selection of grapes from the vineyard.

Intense ruby red color, lively. Smell: intense, elegant, complex, red and black fruit, dried red flowers, green pepper, nutmeg, vanilla. Taste: fresh, intense, full, broad, body-persistent.

Vin Santo Cortona DOC
Lively amber yellow color. Smell: intense, complex, elegant. Candied apricot and peach fruit, caramelized orange, figs, dehydrated lemon; yellow flowers, freesia; nutmeg, dark chocolate, acacia honey. Taste: soft and fresh taste, good acidity that well compensates for the pre-existing sugar residue.

The grape processing process then goes into the cellar, where the grapes are decomposed. While the grapes cross a vibrant sorting table where they are subjected to further manual selection. This selection is done to optimize the quality of the grapes used. Alcoholic fermentation takes place in thermoregulated steel tanks for a period of 15-20 days at a temperature of 26-28 degrees Celsius.

At the end of alcoholic fermentation, a second fermentation takes place under the name of malolactic fermentation. After this process, the finished wine enters the wood maturation phase, 2,25HL barriques for about 9 months. There is an aging of steel before bottling, which can vary from 4-6 months. Once packaged, the wine undergoes a further aging in the bottle 4-6 months before marketing. At the end of this process comes a Cabernet Sauvignon with intense and lively ruby red color.

In addition to the Cabernet Sauvignon, the Viti Winery, also produces the Vin Santo Cortona DOC. It is produced with vines: Trebbiano, Grechetto, Malvasia. And as a last part of the process, after a spontaneous cold decantation it is placed in 100 liter wood carats. The slats come from various kinds of fruit plants. In 5 years the must plays alcoholic fermentation and wooden elevation.
