AZIENDA AGRICOLA BAITA SUSI is located in via San Giorgio 17, in Cividale del Friuli in province of Udine, ancient town located at the foot of the hills of eastern Friuli, along the river Natisone. The company is family-owned breeding pigs, chickens and rabbits for direct sale, as well as dairy cattle whose product is brought to the Dairy of Cividale for further processing.
Azienda Agricola Baita Susi aims to offer a quality product, giving less weight to the amount. Pigs and poultry are in fact fed according to country tradition and then slaughtered at a weight lower than average.
Azienda Agricola Baita Susi prepares a particular product from Friuli called “La Marcundela”: a mixture of minced choice between liver, spleen, kidneys, lungs, soft belly fat, bloody meat, salted and tanned with care, then the dough is wrapped in the web of pork and stuffed into casings called “torto.”
You should consume “La Marcundela” fresh or after a maximum of eight days after cooking, usually boiled in red wine or fried in a pan.
