AZIENDA RIBOLI is located in Nembro, a village located in the province of Bergamo. The company is known and specialized in the processing of whole grain flours, bakery products and biscuits. In fact, the company’s mission is to rediscover ancient tastes through the continuous search for forgotten seeds over the years. However, they are joined by new varieties selected to ensure a rather genuine diet.

The company guarantees a 100% Italian product and specializes in processing and sale stone-ground flour, baked goods and biscuits. All the raw materials used are entirely produced in the farmland.

Rye flour: it is used for the preparation of the famous black bread combined with spelled or wheat flour. Also ideal for making crackers and breadsticks, focaccia and piadine, fresh pasta, biscuits and cakes. Package 500 gr.
Pearl barley: it is the most widespread form because it eliminates a further layer of the seed compared to the hulling, in fact it can be immediately used avoiding the soaking phase. It is ideal for preparing soups, risottos and summer salads. 100 gr. pack
FLOUR OF MAIS NOBILE
Ancient maize milled with natural stone and slowly to preserve its properties intact. The foil is finer than the craved. This type of flour can be used both for making polenta pasticciata and for baking preparations. Excellent for bread or for the breading of meat and fish.
Millet flour: the seeds, after being dehulled, are ground to stone and partially sifted to remove impurities. The composition of this flour is very similar to that of wheat flour but completely gluten-free. 500 gr.
FLOUR OF ANCIENT YELLOW MAIS
Wholemeal fine corn flour, ground with natural stone and slowly to preserve its properties. The thin grain makes it ideal for the preparation of desserts such as biscuits and cakes, as well as for polenta. 500 gr.
Loose flax seeds: after careful cleaning to select and standardize the various seeds without affecting their nutritional properties, they are packaged in 250 gr. bags. Excellent to accompany salads, soups and yoghurt, they act as a glue instead of eggs, in dough desserts.
Spelled flour: suitable for the preparation of pasta and for the most varied baking recipes, from homemade bread to cakes, through pizzas, focaccia and snacks. 500 gr.
