The COAP (Cooperative Ortofrutticole Associate Di Puglia) is located in province of Bari, at Monopoli, in Via Romualdo number 24/26. Our Company, in form of a consortium, for decades started the business of placing cherries in alcohol.
The basin COAP production of the raw material is to the south-east of Bari in Puglia, the cultivar concerned are typically and traditionally industry, to name a few, the Forlì soft and the Hillock hard paste.
Fresh cherries, from the member cooperatives, after an initial phase of the leg and calibration, can follow two paths:
Are entered in ethyl alcohol from molasses pure. After a few days and reached the alcohol content expressed in V / P of 26 +/- 1, we proceed to a second calibration that allows the separation of the cherries in various calibres: 15/16, 16/17, 17/20. The product thus obtained, a request may be pitted, and ready for the production of chocolate pralines or chocolates typically cherry.
Or the cherries after the first calibration phase, may be preserved in a watery solution of Sodium Metabisulfite, to be used by the confectionery industry for the production of candies.
