L’OLPE DI MARCO is a biological company that rises in the territory with a very ancient olive-growing tradition. And it is in the unmatched territory of Magna Graecia, where the olive tree reigns, that the company produces an excellent extra virgin organic olive oil that has also become Slow Food Presidium.
The organic farm Olpe di Marco is located on the first step of the Murgia, 130 meters above sea level. To know that the soils are rocky and rich in limestone as well as potassium. They are cultivated with centuries-old traditional olive groves and young olive trees for olive oil for canteen. In addition, the arable crops of cereals and legumes complete the production. All according to the dictates of organic farming in compliance with European standards Reg. 834/07 and 889/08.
The quality of the olive oil obtained from Olpe di Marco is due to the harvesting methods, which take place directly by hand on the plant. Moreover, to the milling and extraction processes in the company’s mill with precious Italian cultivars. This procedure means that the oil maintains a high content of polyphenolic and vitaminic substances, as it protects it from oxidation, raising its quality.
We wish to underline that in the company the processing of olives and oil extraction are controlled by ICEA. This is an Italian body of organic certification accredited all over the world. In addition, the raw material is guaranteed by a supply chain project. In fact, the control starts from the estimate of the crops up to the packaging of the product, obtaining the traceability and the final traceability of the producer.

Intense bitter green oil; the fruitiness has hints of leaf-grass and artichoke, at the back taste good notes of spicy resulting from freshly pressed green olives. Food pairing: Ideal on roast meat, fresh cheeses, vegetable soups and bruschetta.
OLIO EVO BIO OGLIAROLA 0,5 L.
Intense yellow oil with a medium-light fruity aroma of ripe olives and fresh almonds, with a light taste and good spicy notes. Food pairing: Ready-to-eat lends itself to the seasoning of hot vegetables, vegetables, appetizers and salads.
PATE' OLIVE BIO CELLINA 130 gr.
It is the union of the pulp of the "Cellina" variety olives and the "Biancolilla" organic olive oil produced in the company's oil mill. It is a food with a unique taste recommended as a condiment for pasta dishes or spread on toasted bread and hard wheat bread

Sweet green olives in brine, with a crunchy consistency. The olive groves of our BIO farm are located on the first step of the Murgia, on calcareous soils.
