The Tradizioni Padane dry pasta is made with the ancients: Farro, Senatore Cappelli, whole rye and einkorn Shebar® – the variety of einkorn of Bresciana Plain -. These grains are the only ones not to have suffered interventions selection or genetic modification by man. We choose only the best for remains completely authentic.
The einkorn is the “father of cereals“. Through the project of recovery and development, we have become the only pasta factory in Italy to complete chain for einkorn. A precious cereal dating back to the Bronze Age, with a high content of protein, minerals, vitamins, carotenoids -Vitamin A-, vitamin E, zinc and iron.
From cultivation to decortication at low temperature storage, the combined cleaning of the grains, the natural stone grinding, the pasta making.
