Unlike other capers, our caper lives in fertile and sandy soils, in the countryside surrounded by vineyards and citrus fruits. It is constantly bathed by fresh water, coming from deep strata and when it is caressed by the wind its scent spreads everywhere. And it is precisely the magical union of these elements that create the contrast with its being, which make it special and at the same time “hard and crunchy” with an explosion of flavors in the mouth.
